With the Passover holiday coming up, there are several recipes anyone can use for desserts, whether it is after the Seder meal or during the Passover holiday. There are several cakes and cookies that can be made with the use of matzo meal instead of regular flour.

Several of these ingredients can be found at stores like Safeway, Walmart or Albertson’s. They can also be found at other grocery stores in different sizes.

Passover Brownies

 

INGREDIENTS:
4 eggs – 99 cents for a pack of six eggs
2 cups white sugar – $2.99 for a package of sugar
1 cup melted unsalted butter or margarine – $2.99 to $3.29 cents for package of margarine (7/8 cup of vegetable oil plus ½ teaspoon of salt can be substituted for margarine or butter)
6 tablespoons matzo meal – $4.19-$4.99 (16-ounce container)
1 cup cocoa powder – $5.49 (10-ounce can)
1 cup chopped walnuts – $2.59 (2-ounce bag) to $6.99 (8-ounce bag)
4 1-ounce squares of semisweet chocolate, melted – $2.50 to $3.59 (1 brick)
1 tablespoon softened unsalted butter or margarine
1/8 teaspoon water

DIRECTIONS:
1. Preheat oven to 350 degrees and grease an 8×8-inch baking pan.
2. In a mixing bowl, blend eggs, sugar, and butter. Mix in matzo meal, cocoa powder and walnuts (if desired). Transfer the batter to prepared baking pan.
3. Bake for 30 minutes.
4. In a small mixing bowl, blend chocolate, butter or margarine and water. Spread over cooled brownies.

Passover rolls

 

 

Ingredients:
1 cup water
1/3 cup vegetable oil – $2.99 to $5.99 (24-ounce bottle)
1/4 teaspoon salt $2.59 (11-ounce canister)
1 cup matzo meal – $4.19 to $4.99 (16-ounce canister)
4 eggs – 99 cents for a pack of six eggs

Directions:
1. Preheat the oven to 425 degrees.
2. In a 2 quart pot, bring water, oil and salt to a boil.
3. Remove the pot from heat and add matzo meal. Stir until it forms a ball.
4. Add one egg, and then beat.  Once the egg is incorporated into the mix, add the next one. Repeat this process until all four eggs are in the mix.
5. Drop the mix into oval shape on greased cookie sheet for sandwich style rolls (makes 10 rolls) or fill a greased muffin tin (makes 12 muffins).
6. Bake for 30 minutes.
